If matured this way it can runny and rich with buttery, crème fraiche aromas with a hint of citrus in the centre. For those who like it firmer, you can expect it to be punchier and to develop a distinctive walnut aroma under the rind with a spicy kick in the centre. Whichever way you like it, it will easily still the show on the cheese board.
