It has a complex flavour, sweet and creamy at first before developing a long grassy piquant tang but never sharp or harsh; more mellow and fruity. Stilton can only be made in six dairies in the counties of Nottinghamshire, Derbyshire, and Leicestershire. Stilton takes its name from the town of Stilton, where it was first traded at the Bell Inn in the early 18^th Century – but it cannot be made there!
