Every autumn, cheese lovers eagerly await the start of Vacherin season, a 6 month period until the end of March during which this famous French cheese is available. A rich, soft cheese produced in the Jura mountains which straddle the French and Swiss borders. Vacherin Mont d’Or is wrapped in spruce bark and packaged in pine boxes, which lends a resiny tang to this superb, unctuous cheese. Its distinctive flavour, initially gentle, develops as the cheese matures.
